Before we dive into the dishes, here are some tips to keep in mind when prepping each meal:

Green Goddess Pasta

Ingredients:

How to Prep:

  • Make sure all of the ingredients are thawed if frozen.
  • Cook the tortellini according to the package’s instructions.
  • When complete, drain and rinse the pasta with cold water.
  • Pack the tortellini with the spinach, asparagus, peas, and zucchini.
  • Place the pesto and EVOO in separate, mini, sealable containers.
  • When you’re ready to eat, toss your stuffed tortellini, pesto, and EVOO in a bowl.
  • Microwave for 2 to 2 ½ minutes (stirring halfway through) until warm OR heat everything together on the stove in a pot for 3 to 4 minutes, stirring frequently.
