  • What types of olives are used? When recreating a traditional recipe, it’s best to use an olive oil that is created with olives of origin. For Italian recipes, for example, use an Italian olive oil.

Aglio e Olio Recipe 

Aglio e Olio is the cornerstone of Italian cuisine, translated simply to mean garlic and oil. This will be the building block recipe for many delicious pasta sauce adaptations. Let’s get started with the recipe:

Serves 2 

Ingredients: 

6 tablespoons Tantillo Premiere Extra Virgin Olive Oil

4 garlic cloves, peeled and minced

8oz (half a box) of dried spaghetti noodles, cooked

Salt and pepper to taste

Grated pecorino or parmesan

Instructions:

  • Heat Tantillo Premiere Extra Virgin Olive Oil in an extra-large skillet over medium-low heat.
  • Stir in garlic and sauté for 1-2 minutes or until the garlic is fragrant.
  • Stir in cooked noodles and toss to coat.
  • Season with salt, pepper, and cheese.

  • Lemon. As you’re stirring in the cooked noodles, add 2 tablespoons of Tantillo Sicilian Lemon Juice to balance your dish with acidity.
  • Basil. Add 2 tablespoons of fresh chopped basil to bring freshness to the dish. Include this ingredient as you’re stirring in the cooked noodles.

  • Tomatoes or Sun-dried Tomatoes. As you’re sautéing the garlic, add either one cup of Tantillo California Diced Tomatoes or ½ cup of Tantillo Sundried Tomato Halves. This will soften the tomatoes nicely.
  • Olives. Include a savory element in your Aglio e Olio with a few pitted olives. Add about one cup of pitted whole olives or 1/2 cup chopped olives as you’re stirring in the cooked noodles.
  • Crushed Red Pepper Flakes. Garnish with 1/2 to 1 teaspoon of crushed red pepper flakes for a little extra kick.
  • Bread Crumbs. This is a traditional element that’s added for a bit of crunch. Use about one tablespoon of buttery, toasted bread crumbs per dish when plating.
