If you want to make great olive oil pasta sauce, you should start with high quality oil. Here’s what to look for:

  • What types of olives are used? When recreating a traditional recipe, it’s best to use an olive oil that is created with olives of origin. For Italian recipes, for example, use an Italian olive oil.
  • Where do the olives come from? Olives are primarily grown in warmer climates and are usually surrounded by large bodies of water (olives love nice ocean breezes). The Mediterranean is the ideal olive growing region because of its weather conditions.

Aglio e Olio is the cornerstone of Italian cuisine, translated simply to mean garlic and oil. This will be the building block recipe for many delicious pasta sauce adaptations. Let’s get started with the recipe:

Serves 2 


6 tablespoons Tantillo Premiere Extra Virgin Olive Oil

4 garlic cloves, peeled and minced

8oz (half a box) of dried spaghetti noodles, cooked

Salt and pepper to taste

Grated pecorino or parmesan

  • Stir in garlic and sauté for 1-2 minutes or until the garlic is fragrant.
  • Stir in cooked noodles and toss to coat.

  • Basil. Add 2 tablespoons of fresh chopped basil to bring freshness to the dish. Include this ingredient as you’re stirring in the cooked noodles.

  • Olives. Include a savory element in your Aglio e Olio with a few pitted olives. Add about one cup of pitted whole olives or 1/2 cup chopped olives as you’re stirring in the cooked noodles.
  • Crushed Red Pepper Flakes. Garnish with 1/2 to 1 teaspoon of crushed red pepper flakes for a little extra kick.
  • Bread Crumbs. This is a traditional element that’s added for a bit of crunch. Use about one tablespoon of buttery, toasted bread crumbs per dish when plating.
