Arugula Tuna Salad

Ingredients

1 package/bag baby arugula

1/2 red onion, chopped

1/4 cup olives, halved

2 tbsp pine nuts

2 tbsp Tantillo California Extra Virgin Olive Oil

1/2 lemon, squeezed

8 oz tuna in vegetable oil

1/2 tbsp red wine vinegar

Salt and pepper, to taste

Directions

1Mix arugula, red onion, olives, pine nuts and Tantillo California Extra Virgin Olive Oil together in bowl.

2Next squeeze lemon, add the tuna and drizzle with red wine vinegar.

3Mix salad together well, and lastly sprinkle salt and pepper.
