Grilled Pepper Bruschetta

 2-3 backyard tomatoes, chopped
 1 red and yellow pepper, chopped
 Basil, ripped to small pieces
 1/2 red onion, chopped
 3-4 roasted garlic cloves
 Squeeze of lemon
 2 tbsp Tantillo California Extra Virgin Olive Oil
 Salt and pepper
 Italian bread, sliced
 Fresh mozzarella, sliced

Mix tomatoes, peppers, basil, red onion and roasted garlic cloves in a bowl.


Fold in lemon juice and Tantillo California Extra Virgin Olive Oil.


Sprinkle with salt and pepper.


Layer mozzarella on individual Italian bread slices, and spoon bruschetta mixture on top.
