Pineapple Chicken Skewers

Tantillo Recipes


1/4 cup of Tantillo Chopped Tomatoes

2 tbsp soy sauce

2 tbsp honey

1 tbsp Dijon mustard mustard

2 tbsp light brown sugar

1 clove of garlic, minced

1/4 lemon juiced

1/2 fresh pineapple, cut into 1-2 inch pieces

2 boneless & skinless chicken breasts, cut into 1-2 inch pieces

Sea salt and freshly cracked pepper, to taste

Skewers, soaked in water

Drizzle of Tantillo California Extra Virgin Olive Oil


1Using a small sauté pan, heat the Tantillo Chopped Tomatoes, soy sauce, honey, mustard, brown sugar, garlic, and lemon juice together on low heat for 10 minutes.

2Put alternating chicken and pineapple onto skewers; brush the sauce onto each side. In a medium pan*, drizzle Tantillo California Extra Virgin Olive Oil, and cook the skewers on medium-high heat for about 2 minutes on each side, until chicken is thoroughly cooked. Buon Appetito!

*You can also cook the skewers on the barbeque.
