Pineapple Chicken

 2 chicken breasts
 6 slices fresh pineapple, (½” thick) divided
 1 cilantro bunch, chopped
 1 pinch chili powder
 1 pinch cumin
 ½ red onion, diced
 1 red bell pepper, chopped
 1 lime, juiced
 ½ tsp. honey
 Sea salt to taste

Grill chicken until 70% cooked- transfer chicken to pan sprayed with Pam.

Add half the pineapple. After a few minutes add cilantro, chili powder, cumin.

Cook until chicken is done. Separately combine red onion, red pepper, lime juice, honey, remaining pineapple and salt.

Plate the cooked chicken-pineapple mixture.

Put salsa on top and serve. Buon Appetito!
