1/4 c. Farro
3 oz. Chopped Red Peppers
3 oz. Chopped Yellow Peppers
3 oz. Chopped Green Peppers
3 oz. Chopped Orange Peppers
3 oz. Cooked Edamame
2 1/2 oz. Tantillo Extra Virgin Olive Oil
1 1/4 c. Water
2 cloves Crushed Garlic
2 oz. Asiago Cheese
Salt to Taste
Fresh Chopped Tomato, Parsley To Taste
In a deep pot with boiling salted water- add farro. Boil 20-30 minutes until slightly softened, remove from pan and set aside.
In the same pan, wipe any remaining water so pan is dry. Add Tantillo Extra Virgin Olive Oil & Cook garlic until slightly browned.
Add peppers & edamame, cook until softened 2-3 minutes.
Mix in farro & asiago cheese (optional garnish: chopped tomato & parsley) Buon Appetito!
