Wheat Berry & Pinto Bean Soup

Ingredients

Onion, chopped

Garlic, chopped

Carrots, chopped

1 small can Tomato paste

1 can Diced San Marzano tomatoes, 1/4 cup reserved

2 cups water (add more as needed)

1 cup Wheatberry

1 can Pinto Beans

1 tbsp Tantillo California Extra Virgin Olive Oil

Directions

1Carmalize onions, garlic and carrots in pot.

2Add tomato paste and San Marzano tomatoes.

3Next add water, wheat berry and pinto beans.

4Let simmer 20-25 minutes.

5Top with extra diced tomatoes and Tantillo California Extra Virgin Olive Oil.
