White Quinoa

2 to 3 tbl Tantillo Extra Virgin Olive Oil

½ white onion, diced

15 oz. (1 can) black beans, rinsed

1 tomato, cubed

½ cup cilantro, chopped

1 cup grilled corn

1 lime, juiced


1Cook quinoa according to directions on packet. Meanwhile in a sauté pan, heat Tantillo Extra Virgin Olive Oil on medium heat.

2Add white onion for 4 minutes, until soft and add to a large bowl.

3Once the quinoa is cooked, combine it with the onions. Add the black beans, tomatoes, cilantro, and corn.

4Toss and top with lime juice. Buon Appetito!
